Prioshki

(This recipe came from a high school friend’s, Russian Grandmother. There are many variations of this recipe and this type of food. It is created in many cultures and has numerous names applied to the dish, itself. For those who have sampled the food, it is, just plain, yummy.)

Ingredients:
1 Large Onion, chopped
4 Tblsp. Butter
1 Lb. Ground Beef (Substitute ground Chicken or Turkey)
2 Tblsp. Minced Parsley or Dill
2 Hard Boiled Eggs
1 Tblsp. Flour
1/2 Cup Consomme, Stock or Broth of choice (Remember that Bouillion is sometimes too salty.)
Salt and Pepper to taste
I package of Roll Mix or Can of Ready to Make Dinner Rolls

Procedure:
Saute onion for about 5 minutes, until tender in 1 tablespoon of butter. Add the ground meat to the pan, breaking it up and brown. Salt and pepper to taste, or add your own choice of seasonings. Add parsley or dill if desired.
Remove meat from pan. Brown the flour in the pan adding the 2 Tblsp. of water. Add the consumme and bring to a slight boil. Add all other ingredients and set aside to cool.

Make your roll mix of choice. Once the meat mixture is cool. Roll out the dough from the roll mix or individual rolls from the canned rolls. Cut into small triangles and place a small amount of meat mixture in the middle of each dough piece. Fold over the edges of the dough and pinch together. Place on a baking sheet.
Preheat the oven to the temperature listed on the roll package or canned roll package and once it has reached the correct temperature, bake as directed on the package.
Allow to cool slightly and serve with soup of choice and salad.
You can also make a variety of dipping sauces for the Piroshki, to add to the fun and flavor.
This is also a good cooking adventure with older children.
