(If you have never made a frittata, you will get hooked on this easy and delicious egg dish. Once you have made one recipe, you will probably want to improvise and change it up, from time to time. There are countless ways to change it, using the same basic ingredients and it can be adapted to most life styles and food preferences. )
6 Large Eggs
1 Cup Milk
1 Green Onion
1/4 Cup Shredded Cheese of choice, Cheddar, Jack, Provolone
4 to 5 strips of bacon, cooked and crumbled (I trim off the excess fat and give that to my dog or the birds.)
2 Tbsp. butter, melted
1/2 Tsp. Salt
1/8 Tsp. Black or White Pepper
Preheat oven to 400 degrees. Grease or use cooking spray to coat a 10 1/2″ round baking dish or 9″ x 9″ baking dish.
In medium bowl with wire whisk or hand beater, beat eggs, milk, adding the green onion, butter, salt and pepper until all ingredients are well blended.
Sprinkle the top with the cheese and bacon.
Bake 20 minutes, until set and golden brown.
You can make this without the bacon and add some other veggies, like broccoli.
This recipe makes about 4 servings and should be served with a nice bread and fruit.
